Unlimited domains, databases, and mailboxes simply means the quantity is not restricted by number. The combined size of your website files, databases, and email stored on the server will determine the actual number of hosting resources you'll be able to create in your account, based on your plan's disk space.
We would offer unlimited disk space but then we'd have to put a silly "inode" or "file" count clause in our TOS/AUP. We'd rather just tell you the space you're paying for so you don't have to guess. Rest assured, when someone invents "Unlimited Disk Space" we'll pass the benefit on to you!
